Spinach & Avocado Power Bowl
Ingredients:
- 2 cups baby spinach
- 1/2 avocado, sliced
- 1/4 cup cooked quinoa
- 1/4 cup sliced cucumber
- 1/4 cup shredded carrots
- 2 tbsp pumpkin seeds
- 1 tbsp olive oil
- Juice of 1/2 lemon
- Pinch of sea salt
Instructions:
- In a bowl, layer spinach, quinoa, avocado, cucumber, and carrots.
- Sprinkle pumpkin seeds on top.
- Drizzle with olive oil and lemon juice.
- Add a pinch of sea salt.
