Rainbow Buddha Bowl Recipe

Rainbow Buddha Bowl

Ingredients:

  • 1 cup quinoa
  • 1 cup chopped kale
  • 1/2 cup shredded red cabbage
  • 1/4 cup pomegranate seeds or blueberries
  • 1/2 cup grated carrots
  • 1/2 avocado, sliced
  • 1 tbsp ground flaxseed
  • 1/2 cup steamed broccoli florets
  • 1 tbsp pumpkin seeds

DRESSING: Turmeric-Ginger Vinaigrette

  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1/2 tsp ground turmeric
  • 1/4 tsp freshly grated ginger
  • Pinch of black pepper
  • Sea salt to taste

Instructions:

  1. Cook quinoa and let it cool.
  2. Steam broccoli lightly until bright green and tender-crisp.
  3. In a large bowl, layer kale, red cabbage, carrots, and broccoli.
  4. Add quinoa, avocado, berries, flaxseed, and pumpkin seeds.
  5. Whisk together dressing ingredients and drizzle on top.
  6. Toss gently and enjoy fresh!
