Rainbow Buddha Bowl
Ingredients:
- 1 cup quinoa
- 1 cup chopped kale
- 1/2 cup shredded red cabbage
- 1/4 cup pomegranate seeds or blueberries
- 1/2 cup grated carrots
- 1/2 avocado, sliced
- 1 tbsp ground flaxseed
- 1/2 cup steamed broccoli florets
- 1 tbsp pumpkin seeds
DRESSING: Turmeric-Ginger Vinaigrette
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- 1/2 tsp ground turmeric
- 1/4 tsp freshly grated ginger
- Pinch of black pepper
- Sea salt to taste
Instructions:
- Cook quinoa and let it cool.
- Steam broccoli lightly until bright green and tender-crisp.
- In a large bowl, layer kale, red cabbage, carrots, and broccoli.
- Add quinoa, avocado, berries, flaxseed, and pumpkin seeds.
- Whisk together dressing ingredients and drizzle on top.
- Toss gently and enjoy fresh!
